I agree, and yes, it’s supposed to be lemon meringue. I don’t care for meringue, but oh well. I hardly need to be eating lemon pies if I’m going to be Extremely Thin.
My Mom would make Lemon Meringue pies late at night.
She chilled the lemon filled pie crusts, and then toasted the meringue under the broiler. Sometimes she sprinkled coconut on top.
She said the “Lemon Meringue Fairy” brought it in the middle of the night. :-)
