The problem with your drift theory is that the plane barely moves forward in this multiple overlay while the contrail moves a lot. That doesn't make sense.
Most of the contrial is very far over the ocean to beyond the horizon, i’ts had a lot of time to blow south.
You also get wind shears at altitude, that can easily move a contrail quickly, especially if an aircraft is descending or climbing through different shear zones.
It’s an aircraft folks.
