Those are some thin straws you're hanging onto. The atmosphere was different at 37k ft than at 39k ft and the sat pic with only one contrail, that conveniently held together in the jet stream for its whole length is cropped on the western end just in time to make your case.

There are at least two contrails in that satellite photo. One at the tip of the blue arrow, and the other under the blue arrow. There also appears to be remnants of a third to the south of both the other contrails. I have no idea where the picture came from or who cropped it. Why is the length of the contrail pictured relevent? It could stretch all the way to Hong Kong or start at exactly where the photo starts. Doesn't matter.
