Chicken breast covered with fresh onion, peppers, mushrooms and tomatoes. Topped with a light cheese. All on top of spanish rice and beans......MMMM. Get shredded lettuce and guacamole sauce and serve it with it. Topped off with cinnamon sops???? honey, chocolate and whipped cream.....MMMM MMMM MMMM.

I’m in San Jose and had not heard of Mexican Chicke per se.

Mexican rice sure.

A friend cooked some terrific beans and rice and another made this fabulous Chicken Verde.

He grilled the chiles to make his sauce.

Really, really, really delicious.

I don’t cook but my two friends are chefs and one is well known in the Bay Area.
