That one is easy: God dictated/wrote Genesis, so the 'days of creation' were His days (however long that happened to be) -- not 'man's days' (one rotation of this insignificant, created ball of mud). To claim anything else is the utmost in sinful hubris.

I think a lot of people have a problem conceiving of time in any way outside the "framework" of the linear series of moments moving irreversibly from past to present to future that they directly experience and confirm by sense perception.
But God is not in time. So how can man "measure" Him?
