The task of the court/judge is to render verdicts that do not divide the population. Justice wears a blindfold in order to maintain stability over time so that rulings will not contradict previous rulings or other rulings. It's not so much an ideal that Justice should not distinguish based on attributes of the parties, but a practical, working method. It's as though each case becomes one of a group of simultaneous equations and if Justice includes the many other variables of individual characteristics the problem becomes insoluable. The number of rulings becomes so great there is no clear solution to any problem. The result is a great number of law, a great number of lawyers, great division within the body politic. Blindfolded Justice is good form required to maintain stability in the legal system over time -- not just a nice idea.
