I don’t think there would be all of this yelling if our REPRESENTATIVES in Congress acted like representatives and listened. Instead, they go to these Town Hall meetings with an agenda, then lecture and expect everyone to go along without question.
This spring, here in Roswell, NM,they tried to annex most of the county, let me tell you the anger was as real as any you see on T.V............and we won.
They left us alone.

I made the standard Toll House Choc Chip Cookies every time.
This morning I asked him what other kinds of cookies he likes. Peanut butter cookies and oatmeal with raisin are approved alternatives.
I do have a great recipe for PB cookies from an old Betty Crocker book. These turn out so good and look like they belong in a really good bakery:
PB Cookies

1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup real butter, softened
1/2 cup peanut butter
1 egg
1 1/4 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
*note: I add vanilla although it is not in the recipe. A bit more flour has to be added when one tsp vanilla goes in the batter.
Mix sugars,butter,PB,egg.
Stir in remaining ingredients.
Heat oven to 375 degrees.
Lightly grease 2 cookie sheets.
Roll dough in hands to desired size and flatten with a fork in a criss-cross pattern, and sprinkle each flattened cookie with granulated sugar before baking.
Bake 8 to 10 minutes or until cookies are slightly browned on top.
Yield, about 18 large cookies.

I imagine that any bill passed will have mechanisms in place for later expansion and morphing into public option, and then ultimately single payer. This is how they always accomplish their ultimate goals when the political kitchen gets too hot.

My dear Mom made the best oatmeal cookies anywhere, but I haven’t been able to find the recipe yet. She used to use either raisins or currants and put them in a small pan with some water and just bring them to a boil then let them cool. This made for the moistest cookies ever and were always gone in minutes from the oven.

I sneak in extra PB in the recipe, maybe an extra quarter cup. Doesn’t seem to make the consistency too gooey so I don’t add more flour. Makes them moist and delicious. I don’t like to measure the PB since it’s so hard to get it out of the measuring cup. I just guess on the high side and glop it in the bowl with a spoon. PB is a mess to deal with but it’s really good in these cookies. With the extra vanilla and PB, and the sugar on the top, they look good enough to sell.
Maybe try the oatmeal ones and deviate from the recipe. I only use real butter in baking and cooking. I am sure Quaker calls for margarine, but I hate that stuff. I go for the real deal from the cow, Land O Lakes Butter. Makes a big difference in taste and how the cookie turns out. Margarine used to make rather flat cookies for me.
I figure butter is the natural choice. I even got my husband to stop saute-ing things in that vile margarine. I told him it’s oil and water and to please try butter. He finally listened this year and he’s stopped buying Country Crock. He had to admit butter is better. As the saying went “Butter made Betty’s bitter batter better”! Oldie but goodie.
While we’ve taken over and made cooking comments here, I’ll throw out another thing I learned last year. Canned mushrooms are almost always from China and Indonesia. Even Green Giant and Pennsylvania Dutch brands. It’s on the cans. We’ve been buying fresh USA mushrooms for almost a year now. The taste is 100 percent better too.
Land o’ Lakes butter is so good. I like the sweet unsalted. I got hooked on it on my honeymoon in the Bahamas. I’ll give that a try. Thanks.
