I've long thought that Codex was a distraction from real issues. It may still be. But 2479 is a monstrosity. It was toned down a little, but still contains requirements for all food sellers and preparers to have federal registration and inspection. Also all ingredients of food, whether added or naturally occuring can be regulated for purposes of "food safety".
I suggest you take a hard long look at 2479. Read the whole thing. Your statement is technically correct, nothing in it says that all nutrients will be removed. But in 2479, any ingredient, whether natural or added, can be removed at the direction of government "scientists" (you know the ones who brought us "global warming").
But just for pointing out the "technically correct," look at the abuse that has been heaped.
The hyperbole and the ad hominem reaction only serve to blunt credibility of 2479/Codex criticism.
