Alton Brown is fantastic, imo. He really makes me want to learn more about the science of cooking. It has to be very important to understand why you do what you do in the kitchen, if you want to take the next step beyond simply blindly following recipes all your life. But he's another one of those chefs I've never gotten around to.

I went nuts several years ago and bought tons of classic cookbooks. Which would be great if I cooked all the time. Like, oh, say, 12 times a day, lol. Maybe then I could catch up. Here's one I've been meaning to dust off, but haven't yet. Just finished Bittman's How to Cook Anything last week. It collected dust here for a longest time. Man, there are some great looking recipes in that book. I like simple and most of his are.
