From Wikipedia:Tuna are several species of ocean-dwelling fish in the family Scombridae, mostly in the genus Thunnus. Tunas are fast swimmers—have been clocked at 77 km/h (48 mph)—and include several species that are warm-blooded. Unlike most fish species, which have white flesh, the flesh of tuna is pink to dark red. This is because tuna muscle tissue contains greater quantities of myoglobin, an oxygen-binding molecule.

The major species of tuna are: Yellowfin, Bluefin, Big Eye, Albacore, and Skipjack.

Yellowfin (Along with Big Eye, known Ahi in Hawaii)

Southern Bluefin

Big Eye, also known as Ahi in Hawaii, has a higher fat content in its flesh and is generally found in colder waters.

In the United States, only Albacore can legally be sold in canned form as "white meat tuna"; in other countries, Yellowfin is also acceptable as "white meat tuna."

Skipjack (Aku in Hawaii)

YUM! I love when my friends catch atlantic bluefin, they call me on the way in, I get more beer and we feast on sashimi right at the dock, still warm. NOTHING beats that !
