I agree with you. A braised oxtail can be every bit as sumptuous as the braised veal shank from Italy I use to parody the opulence that liberals perceive conservatives live. It is actually more flavorful and the high concentration of gelatin makes it one of the most nutritious cuts of beef you can get.
