Salt water (which Greenland ice will be by the time it gets to the eastern Mediterranean) isn't much good for irrigating crops.

No it isn't, but a salt water body does evaporate which creates condensation which creates rain which is generally fresh water.

This is why areas near large bodies of water generally get more rain and deserts along coastlines of the same are rare. though not unheard of.
