Had these cretins the tiniest bit of imagination, they would have cleaned the dead birds, added a bit of duck fat, then slow-cooked the birds in the duck fat and made a great heaping stack of duck confit. Cost? About 50 cents/lb. plus the labour of cooking.

Value? I priced duck confit at a local store last week: $18.00/lb.

If the Canadians' delicate sensibilities about ''profiteering'' on dead birds were offended, they could have donated them to the poor and the shelters.

500 average-size ducks? Close to a TON of edible duck meat, and if made into confit, doesn't spoil for weeks and weeks unless left out in the sun or something equivalently stupid. I have, right this minute, a pound or so of confit that's been in the freezer (well wrapped, of course) for at least a year, never a worry.

Apparently, the Canadians have forgotten the old proverb: if someone hands you a duck, make confit of duck...no, wait, that's lemons and lemonade...well, hell, same difference...
