Do they allow voters to change from independent to Republican at the poll? Do they have election day voter registration?

Not legally. That is, one mayregister or change one’s party, but unless it was done 30 days prior to the election, one can’t vote for the new party (if change) or at all (if new registration)

That said, I remember in 2000 being told by the clerk (in Sarasota county) that I had already received an absentee ballot (I did not) and had to cast a provisional ballot. The next year, after my dh had passed away, I went to vote and noticed that he not only voted that day, but he had changed his registration to Democrat. When I pointed out that he was dead I was asked if I could prove it.
