So all polytheistic religions are really monotheistic because monotheistic observers of the polytheistic religions say they are? Sounds a bit, um... egocentric.

Those polytheistic religions aren't devoid of monotheistic concepts (just as monotheisms may have polytheistic elements).

You find ideas of "one God" in many polytheistic religions. Wikipedia's article on "Monotheism" may be a good place to start.

I don't know if that makes them "really monotheistic," but it's not just a matter of the observer's egocentrism.

One could just as well make a case that the idea of a rigid divide between monotheism and polytheism reflects egocentrism.
