You oughta try mine ... boiled small white or red potatoes, with fine chopped fresh tomatoes (seeds removed), sweet onion, green peppers, jalapeno sauce (I use McIlheney’s green hot sauce), raspberry vinaigrette w/extra virgin olive oil. When the 'tatoes start turning red, eat it up!
