Delicious New Recipes Developed Just For Fasta Pasta®

Healthy Very Berry Pie

A quick and easy pie that’s not too sweet

 

2 cups frozen berries (raspberry, blackberry, blueberry)

1 Tbs. granulated sugar (or substitute 2 Splenda packets)

½ tsp. grated lemon rind

8 oz. Cool Whip Lite or your favorite whipped topping

6 oz. vanilla flavored light yogurt

3 Tbs. lemon flavor instant pudding & pie filling

1 ready made graham cracker pie crust

 

·         Place frozen berries, sugar and lemon rind in cooker

·         Cook on high for 5 minutes

 

Meanwhile:

·         Lightly blend 4 oz. Cool Whip (half of container), yogurt, and

      instant pudding & pie filling together.

 

Back to the berries:

·         Remove berries from microwave. Combine with Cool Whip,

      yogurt & pudding mixture.

·         Pour into graham cracker pie crust

·         Top with remaining Cool Whip

·         Refrigerate 1-2 hours.

·         Top with remaining Cool Whip. Serve.

 

Marinated Pepper Salad

Serves 2-4

 

A colorful addition to any meal.

 

1 red bell pepper

1 yellow or orange bell pepper

1/2 onion

3-4 oz. ham

1 Tbs. balsamic vinegar

1 Tbs. fresh cilantro

3 Tbs. olive oil

2 tsp. soy sauce

½ tsp. salt

⅛ tsp. black pepper

¼ cup water

 

·         Slice bell peppers, onion and ham into thin slices

·         Place peppers in cooker. Add ¼ cup water.

·         Cook 3 minutes.

·         Remove from microwave.

·         Place sliced onions on top of peppers and return to microwave.

·         Cook 2 minutes.

·         Remove from microwave. Strain.

·         Combine with remaining ingredients.

·         Refrigerate until ready to serve.

 

Sicilian Tomato Sauce

Serves 4

 

Perfect for the summer months- hardly any cooking!

 

3 cups mostaccioli

¼ cup olive oil

¼ cup pine nuts

¼ cup grated Parmesan

1 clove garlic

2 cups fresh basil leaves

1 lb. Roma tomatoes

salt and pepper to taste

Parmesan for garnish

 

·        Place pasta and salt in cooker.

·        Add water to level 4.

·        Cook 10 mins. Stir, cook 7 mins.

 

Meanwhile:

·        Place pine nuts, Parmesan and garlic in the food processor. Blend to a rough chop.

·        Add basil and olive oil; process for a few seconds, just to blend.

·        Add tomatoes and pulse until you have a chunky sauce.

·        Season to taste with salt and pepper.

 

Back to the Pasta:

·        Remove pasta from microwave; drain.

·        Pour sauce over pasta.

·        Sprinkle with Parmesan.

   

Really Easy Risotto            

Serves 2-4

 

A delicious risotto in minutes- really!

 

1 cup Arborio rice or short grain rice

1 can  (14 oz.) vegetable or chicken stock

1Tbs. olive oil

1 Tbs. Italian seasoning

¼ cup Parmesan cheese

Salt to taste

Fresh basil (optional)

 

·        Place rice, stock, olive oil, salt and Italian seasoning in cooker

·         Add water to level 4.

·        Cook 17 mins.

·        Remove from microwave. Stir in Parmesan

·        Place lid on cooker and let rest for 3 more minutes.

·        Top with fresh basil (optional)

      After cooking, place lid on cooker and allow to rest for 5-10 minutes.
