I believe the 5.7 refers to the engine's displacement, not the miles per gallon.

A fully loaded 23-foot box van gets about 5 mpg. So, is the Tahoe fully armored so it weighs what, about 10 tons?

For sure. My 35' 22,000 LB Itasca with an 8.1l (500 CuIn) engine towing a Nissan Maxima at 62MPH gets an average of 7.5MPG.
