I have a problem with the species jumping idea.

Hmmm. Maybe you're unaware of it, but even the benighted, luddite creationists at Answers in Genesis accept speciation. Indeed they think speciation happened far more rapidly than conventional evolutionists do, with millions of extant species coalescing from the maximum few tens of thousands of "created kinds" preserved on "Noah's Ark" in the space of only a few thousand years.

There haven't been any serious "fixed species" creationists since the 19th Century. Modern antievolutionists, for instance, all believe that a family like "horses" almost certainly comprise a single "created" kind. This includes dozens of species of horses, asses, donkeys, zebras, etc, many with different chromosome numbers and organizations. This is actually quite a bit of "species jumping".

Regarding horses, just as with the example of flies above, you have shown adaptation as each horse type adapted or through natural selection achieved a different species status in its environment, this is not evolution from one life form to another. These are genetic variances within the same genome.
