Walter Scheib, White House chef from 1994 to 2005

Scheib, whose business is called "The American Chef," said Hillary Clinton hired him to bring "contemporary American cuisine" to the White House, a style based on flavors and seasonal ingredients rather than techniques.

"The Clintons loved lamb rack, but not veal or shellfish," Scheib said. "Mrs. Clinton challenged us to have a garden on the roof to grow our vegetables. When Chelsea Clinton became a vegetarian, I taught her how to make salad dressings, soup stock and other things. Chelsea made a red curry sweet potato soup that even Tony Blair liked."
