Read the article I linked to in post #316. I realize if you wait until the body is cold, it's too late to harvest the organs. But couldn't we at least wait until they're dead before harvesting the organs?

They wait until brain death. The leave the body on a heart and lung machine ("life support") while the organs are removed because if oxygenated blood flow stops while the organ is still warm, the tissue will die. So no, we can't wait and never have.
