I use red lentils, didn't even know they have green ones!
Today I experimented by adding anise instead of fennel (I love both dearly), and it turned out great, but yes, fennel is a big key to the flavor. It is very aromatic while cooking.
Oh good heavens how could I have forgotten my very favorite. You bet! You MUST have applesauce with pork! As far as the mint sauce, I've tried that and it's OK, just a hold over from childhood I guess as far as the mint jelly!

Hi to Mr. Growlin (I don't believe for a minute that he's that ferocious!).
As you saw, he's not, but thought it would be appropriate since I'm Snarlin, which I'm not.
Hubby has been a Freeper for awhile under a different screen name. But he's tepid about it, since he has no time to do this really. There were times I wanted to ping him to something and that's a little difficult unless you have a name.
BTW, my name was born out of despair as I had just lost my darling dog, Cubby, and trust me, for awhile I was snarlin on the inside and crying on the outside. I called him my Cub Bear.
That was many years ago now. And I still grieve but don't snarl.
