With the easy availability of composites it would not be hard to design and manufacture ME163 (except use solid rocket engine?) replicas to be used as manned kamikaze interceptors. For quick assembly fold down and lock wings. The whole thing including launch ramp would fit in a semi trailer.

That would be for use against civilian aircraft and not bridges of course.

Yes, it would not be hard to create a kamikaze interecptor, but using it to take out one of the towers or cables is another matter.
