Yack! I've never watched sausage being made, and don't ever intend to, but I sure love to eat 'em!

I'm a firm believer that there's some stuff you're just better off not knowing, mostly when it comes to tasty meat products.

Grew up on the farms of both grandfathers.
Stirred the kettles into my teens.
Hog butchering was a yearly tradition.
cooking and pressing lard. ( my arteries are still
thin as needles to this day from eating cracklins.
They never used the stuff in that other recipe.
Just cheek meat , hocks , kidneys and such.
The Amish "ponhaus" (sp) is just a slightly different
recipe. I printed out the better recipe to make at home.
Can't get any good stuff in Pittsburgh like Wrights Liquid
Smoke , Real hog casings, or Tender Quick. Have to drive
165 miles 1 way to center of state to get supplies to make bologna.
