It does not make "perfect sense to me!".
I agree with the idea that evolution was God's elegant way to form the physical body of man.
I do not agree that the physical body of man is "in God's Image".
God is Spirit. It is only Man's spirit/soul that is "in the image and likeness of God".
When was the last time you saw a human whose body looked like a burning bush -- or a pillar of smoke -- or a pillar of fire -- or a being with feathered wings.-- or...?
Or, for that matter, why was it necessary for Jesus to "take upon himself the form of a man.."?

Note that in Genesis 2:7, man is created in "two steps": creation from the dust of the earth (to which physical evolution may well apply); and then at some (unspecified) later time, God "breathed" the breath of Life into man. It was not until the latter was accomplished that man became fully human.
In short, evolution applies to the physical (or as hosepipe puts it, to "the donkey"); it does not apply to the human soul, which is eternal because the Pneuma of God. It is the soul, not the donkey, that is made in the image of God.

Exodus 33:11 (KJV):
And the LORD spake unto Moses face to face, as a man speaketh unto his friend. And he turned again into the camp: but his servant Joshua, the son of Nun, a young man, departed not out of the tabernacle.
You are the first Christian I've seen take that tack here. I totally agree.
IMO It's our unchanging eternal soul that is an "image" of God. Not our imperfect changing aging shedding leaking bodies.
Why would God need intestines? Or hair? Or eyes? It makes no sense.
It's the height of materialism to think so.
In the beginning nothing existed but God and his body. He had two legs, but didn't walk around on anything because he hadn't invented surfaces yet.
He had two ears, but since he hadn't invented anything that made noise yet, he didn't use them. He had two eyes, etc...
Doesn't make sense to me!
