So why not have the "most offensive statement" be related to the premise of the book? Then at least you're on the subject.

Because there are several more words, sentences, statements and even chapters to consider.
I haven't read it yet, but can comfortably assume that when the MSM assigns the most controversial statement as the premise, or "subject" as you say, then I know this is the worst that they can find, and they also assume it will hurt her in the greatest way.
She didn't pick the statement that they (and apparently we) would fixate on.
