There are html codes that can do the greater than and less than symbols, and a bunch of other stuff.

mash here

& #60 ;(remove spaces) is less than
& #62 ;(remove spaces) is greater than

Incorporate that into your html, and poof, instant < or >

The primary use I find for that is in the </sarcasm> (&lt;/sarcasm&gt;) pseudo HTML tag closure.
