There are html codes that can do the greater than and less than symbols, and a bunch of other stuff.
mash here
& #60 ;(remove spaces) is less than
& #62 ;(remove spaces) is greater than
Incorporate that into your html, and poof, instant < or >

ThePythonicCow pointed out that & produces "&".
That's significant because it enables me to explain in HTML that
- < produces the "less than" symbol (<) and
- > produces the "greater than" symbol (>)
The primary use I find for that is in the
</sarcasm> (
</sarcasm>) pseudo HTML tag closure.
