FWIW, traditional Mexican cooking uses lard. Lots of it.

To give you an idea how much lard is used with 2 cups of cooked beans. This is lard overkill as far as I'm concerned ---->>>
Refried Beans
Ingredients
1/2 cup vegetable oil or lard
2 cups cooked Pinto Beans (recipe follows)
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon salt
1/8 teaspoon pepper
Instructions
Heat lard in 10-inch skillet over medium heat until hot. Add Pinto Beans; cook, stirring occasionally, 5 minutes. Mash beans; stir in chile powder, cumin, salt and pepper. Add more oil to skillet if necessary; cook and stir until a smooth paste forms, about 5 minutes. Garnish with shredded cheese if desired.

I converted. I told my priest Peter's dream (where he was told to ignore kashrut rules) was the real reason.
We do still celebrate all the applicable festivals, however, and I got a lot Anglicans and roman catholics drunk during Lent this past Purim.
My poor daughters also have to learn Hebrew, along with Sunday school.
I remind them "chosen people" means "chosen," which is not necessily a pleasant thing.
