It's juct like Sauerkraut, fermented. I think they put hot peppers in it. KimChee, like Sauerkraut, has a beneficial bacteria in it, I forget which one. Also, it smells to high heaven. My wife hates Sauerkraut but I love it, matter of taste I guess.
