Oh, you'd be surprised at the things we don't have laws against. Many states have no laws against necrophilia, bestiality, and other nasty things. I'm guessing that very few states have laws that address cannibalism of this sort.
Usually, a state can find some other law to use, though, in a prosecution.
I think they have laws against cannibalism in Colorado. At least that's how they convicted Alfred Packer. But again I'm kind of suspicious, as the story goes, when passing sentence on Packer, the judge said, "We don't have that many democrats in Colorado and you done ate six of em." So maybe it's only a crime if you eat democrats.
