A braised shank, at least I think it was braised. (All I really know about cooking is how to eat the result.) Rich, full flavored, tender meat. Falling off the bone. Enjoyed it with a big Barolo, of which I drank about 90% of the bottle, since my wife is not much of a drinker.

You can eat the bone marrow too, it's much better tasting than you'd think if you had never tried it. Just like foie gras, it's all the fat that makes it so delicious. I scoop it out and mix it with my mashed potatoes.
