I saw a lot of discussion on the observed effects of gravity; nothing on any of the several theories of gravity.

I think you are confusing the law of gravity, which is the mathematical description of the observed effects of an attractive force (f=Gm₁m₂/r²) with the theory of gravity, which is an attempt to explain why the force exists in the first place.

There are several theories of gravity currently being debated.
