It is a dish made with fermented cabbage...which in a way, is what sauerkraut is...but, my husband said that in Vietnam, they would have these crocks of this fermented cabbage and would just keep adding leftover veggies to it...
and he said the smell, would knock him over..and the people that ate it, as their main food, even smelled like it when they weren't eating it.

I have a Korean sister-in-law. She makes great kimshi. If a person is prone to like the stuff!
