LOL, good question. Actually it's the pork you want to be done and the kraut softened and mellowed somewhat. The crockpot does all of that deliciously, melding the flavors, etc.

Sauerkraut just out of a can or package is totally bland and without character. It needs to slow cook with meat to reach its full potential.

Went to the store yesterday to get the makins for Kimchi and they were out of the Napa Cabbage so I bought some kraut.
