I don't see a lot of people complaining about hearing "Happy Holidays" from store employees. That's not the real issue here. Personally, it doesn't bother me at all, nor would it offend me if a Jewish person wished me a happy Hannukkah.
However, it does offend me when retailers engage in sillyness like changing the name of Christmas trees to "Holiday trees". What else would the trees be? The retailers are sending a strong signal that they'd rather make the 1% of American ACLU-loving moonbats happy than the 96% of American that celebrate Christmas.
As a long-term customer, that offends me, so I'll simply take my business to another retailer that isn't ashamed of me and my Christian holy day.

Yeah, that's just stupidity. I know of no other holiday where an evergreen tree is brought inside, decorated and lit with presents under it. I don't care what religion someone is or isn't, that is a Christmas tree, plain and simple.
I will 'Ditto' your comments.
A salesclerk wishing me a "Happy Holiday" doesn't bother me.
However the Holiday Tree, Winter Holiday,etc is driving me crazy.
