Yea!! I've been waiting for this thread all year!

Do you have a good recipe for baked sweet potato fries?

Tex-Mex Baked Sweet Potato Fries
1) Prepare the sweet potatoes: In a small bowl, combine cumin, salt, and pepper.
Set aside. Preheat oven to 400 degrees F.
2) Peel potatoes, cut each in half lengthwise, and cut each half into 6 wedges.
3) In a large bowl, combine the cut potatoes, oil, and spice mixture. Toss until potatoes are evenly coated.
4) Bake the fries: On a baking sheet, arrange potatoes in a single layer and place on the middle shelf of the oven.
Bake until edges are crisp and potatoes are cooked through -- about 30 minutes. Serve immediately.

Sweet potato fries-
We just toss them about in a bit of olive oil and salt and pepper. Pop into the oven on a cookie sheet.

What else would you do to them?

(sweet potatoes are the best!)

I like sweet potato casserole and baked sweet potatoes. You are making me hungry.

Peel sweet potatoes
Cut in large wedges (like steak fries)
put in plastic zip bag. Add extra virgin olive oil, salt & papper, cumin and cinnamon and nutmeg.

Toss and place on baking sheet. Bake at 400 for 1/2 hour or until done.

YUMM!!
