The founder of the Gallo Salami company died recently in San Francisco. (Not of the Thunderbird "wine" Gallo family.) I forget his name and other details, but some time ago, 20 years maybe, he sold the company to some big food concern. Immediately, the big food concern changed his formula to make the salami less spicy, to broaden its appeal to the bland tastes of the American public. He didn't appreciate the change, but what could he do.
This brings to mind this marketing gimmick (is there a an American Sauerkraut Association based, where else, on K Street in DC?) to promote sauerkraut as an American version of kimchi, an absurd idea on the face of it, since no one would dare to mass market the real thang.

Sauerkraut shake, made with sweet acidophiles & unpasteurized yogurt?
Sprinkle wheat germ & raw sunflower seeds on top!

Is it German sauerkraut that cures it or Korean Kimchi? I am half German and don't mind some (cooked) sauerkraut. I can't handle Kimchi.

German Sausage and Sauerkraut
Serve with heated pumpernickel bread and a side of seasoned applesauce.
- 1 (16-ounce) bag refrigerated sauerkraut, rinsed and drained
- 1/2 red bell pepper, seeded and chopped
- 1/2 chopped red onion
- 2 tablespoons white wine vinegar
- 1 teaspoon caraway seeds
- 1 tablespoon firmly packed brown sugar
- 1 pound smoked German sausage of your choice, sliced
Preheat oven to 350*F (175*C).
1) Place all ingredients in a 2 1/2-quart casserole dish lightly coated with cooking spray or oil and mix well.
Cover the sausage with sauerkraut.
2) Cover the dish and bake until heated through, 35 to 40 minutes.
Serves 4.
