He didn't change it, he fulfilled it. The law in the Old Testament was there to show that we are unable to keep it. There is no way anyone in the O.T. was able to keep all those laws. They fell short every time no matter how much they tried. The OT laws pointed the way to Jesus. That there is no other way to God except through Him.
I take it from God that the Bible is his Word. Do you think He would let men screw up something that important? If He is that weak then why bother. Instead he led men (how many different men!) over a period of hundreds of years to write books that fit together so neatly and concisely that to think they just happened to compliment each other out of coincidence is more of a stretch than to believe He wouldn't prevent men messing up His planned message.

Does the Bible record Jesus commanding the writing of the New Testament?
Does the Bible tell us what books should be in the Bible?
Who determined the canon of the New Testament? By what authority?
