If your senior year math book says "Disney" on the front, you're probably unprepared for college and should not be admitted to most colleges. Of course the textbook matters; in every subject considered important by the university.

Yeah, because if I was taught history from a text that stated the Cold War was started when Hitler was shot in Yugoslavia by a Jew, and ended when the Germans won a race with the Americans to the moon between Yuri Gagarin in a V2 and Henry Ford in a Saturn '05 Ion, who's to say if I'm actually knowlegable or not? (Absurd, yes. But my text does cover all the correct participants in history, it just has a different theory of the relationships between them.) </snarky>

But then why is it UC's job to figure out if you are knowledgable in spite of learning from poor texts in school, before they admit you? They're not hard up for applicants. Don't go to a school that teaches from poor texts, or take extra classes if you want to go to UC!

If you learned math from a textbook that says that two plus two makes five, or learned history from a textbook that says that the Holocaust was a bogus story invented by the Jews, or learned economics from a textbook that says that the government can lift people out of poverty by printing more money, then I think it's reasonable to conclude that you are simply not prepared for any sort of academically credible college.

The same is true if you learned biology from a textbood that says that evolution did not happen.
