I like AMD as well, but aren't their advanced chip sales limited by their ability to produce them in large numbers. How can they sell more than they can make?

In PRODUCTION usage, not benchmarks, Opterons blow away the Xeons. Hands down.
Intel's "position" is to drive its last real rival off the field through the use of unlawful entangling bundling alliances, a tactic available only to a dominant market holder. Deny Intel the use of those unlawful, entangling, bundling alliances so that it must compete fairly. If it maintains or increases its market share fairly, so be it. If it doesn't, so be it.
