Evolution and Relativity are hardly "proven", just commonly accepted and for the most part resistant to being disproven.
Any scientific theory is subject to revision as technology and understanding progress.

Relativity has been proven in some aspects. They've taken atomic clocks on very fast aircraft and proven that time does slow down as a product of relative velocity. Also, many years ago, the "red shift" was proven. Not mention SCSD's.
As far as evolution, I think that what we know, I mean really know, leads us to the logical assumption that it takes place. How else would we explain fossils, hybrid species, etc?

Like Newtonianism from the 18th to the 20th centuries, these are simply ruling paradigns, likely to be superceded by later theories --which may be true or false. Progress is not inevitable.
