In the new Testament, the first miracle Jesus Christ performs is changing water into wine, clearly Alchemy, clearly magic.

The critical difference is that Joseph was fulfilling the Will of God, and his interpretation was inspired by the very Spirit of God. The "province" of the seers and fortune tellers you speak of was (and is) the province of the Devil, contrasted to Joseph, who trusted in the Lord his God, who delivered him.

Moses did what he was told by Almighty God, and that trumps any "province" you think alchemists had, have or will have.

Jesus has never needed "magic". Don't fool yourself. Jesus was the manifestation of God in the flesh, and even when the sly and clever types attempted to suggest that Jesus cast out demons by the power of Beelzebub, Jesus was quick to remind them that Satan cannot cast out Satan, i.e., "a house divided against itself cannot stand", and nobody ever laid a glove on Him.
And neither have you.

"My copy of the Old Testament has Joseph interpreting dreams..." Joseph interpreted dreams through the power of the Holy Spirit. Moses parted the Red Sea by doing as the Lord commanded him. Jesus is God, and created the water, and the wine. These actions are the actions of God. While there is no present evidence that 'alchemy' is possible, spirits not of God may transmit messages to humans willing to receive them; God commanded us not to receive them, and also told us that those messages were mostly lies.
These concepts are discussed in great detail in the Bible, if you are interested.
