This being the case, exactly what “rights and freedoms of the American people” are they going to war to protect?

Simple. Roe v Wade. Period.

And being that the American people (and likely the vast majority of congress) do not even know that if Roe was overturned abortion would NOT become illegal.

Test it yourself. Ask a bunch of people the question, "If Roe v Wade is overturned, will abortion become illegal?" I would venture a sizable wager that greater than 95% of those asked would incorrectly answer "yes".
