Ah, never liked kimchee all that much, although I do think it really does have some cold-curing quality. I will eat it in gallons when I'm not well.
Though I really do like kgalbi and think that it should be the foundation for Korean restaurants stateside, I dislike the 'barbecue beef' misnomer. It isn't barbecue if it's cooked on a plate of steel--it's gotta touch fire to be a barbecue, in my eyes.
Kimbabp is pretty good, too. And I relearned my love for Spam (not the junk email, the food) in Korea.
True about the bulgogi, I've barbequed mine over a fire and have to say it tastes even better (mom's special family recipe, yum!).
As far as kimchee having cold curing capabilities, I have to say some of that stuff is hot enough to clear anyone's sinuses!
