They can't. Just about every place that serves french fries will fry them in a meat-based oil. That's generally what makes them taste good, too.

They can't. Just about every place that serves french fries will fry them in a meat-based oil. Actually, vegetable oil or vegetable/tallow blends are very common. Canola (ugh!) especially.
Healthier to make them at home with bacon grease.

Actually, hardly anybody uses animal fat for deep-frying anymore, more's the shame. Hydrogenated vegetable oils are much cheaper and are what are mostly used these days, except where they're now switching over to non-hydrogenated vegetable oils due to concerns about the hydrogenated stuff.
