The reason viruses are never discussed in the Bible is because no one knew they were there. That is true of a lot of things in the Bible that we know better now. Trying to fit primitive stories into reality is difficult unless you
use some common sense, understand the time of writing and genre and interpret accordingly.
There is no reason to fight against the facts of science. God and science are not contradictory. You yourself said that God created science. I agree.
I just hope you would try to argue in a way that is consistent with all the information we have. You argue one set of arguments, forgetting there are a whole slew of facts that oppose your argument.

I don't buy into all the things you buy into as being "facts". Yes there is a fossil record. There is an evolutionist interpretation of that record and there is a Creationist interpretation of that record. The two are not the same.
