Getting back to your explanation of the animals being made out of the ground etc. Since God rested on the 7th "day", I don't see why he would continue to do things after that. He either literally rested or he did not.
For him to be making all animals from the ground, when he had already created them in a different sequence in Gen 1.
Then you avoid the obvious literal word of God where it says that God thought an animal might be a good helpmate for Adam. He was obviously working past the rest time, unless the "day" is a longer period of time than 24 hr day.
