I lived in NY for 35 years and until recently, and I've never heard the expression ya'll.

The correct expression is "you all." Ya'll is vulgar vernacular.

It is a contraction. How is it any more "vulgar" than your use of "I'm" in your first sentence?

Well if southerners talked as fast as New Yorkers we might have time to say "you all", but if we didn't take shortcuts we'd never finish a sentence.

Another common expression down here is "we don't really care how y'all do it up north." :)
