Scripture specifically says that God created man in his image in the beginning.

I didn't say that. I said "the beginning" and that's what scripture says. To me, the "beginning" clearly means the time when something starts or begins.

Also, God told man to fill the earth and subdue it. He told man to rule over every living creature - and we do just that.
