Reaching back into my brain for college biology courses, I seem to remember that "white matter" is white because it is sheathed in myelin.

Yup - white matter is the wires (axons) connecting the brain cells together, gray matter is where the cells (neurons) themselves are.

And now that I'm thinking about it, Myelin is a a fatty substance.

Reaching back into my brain for college biology courses, I seem to remember that "white matter" is white because it is sheathed in myelin. That's only in spring and summer. You wouldn't dare wear white myelin in fall or winter. That's how the wife explained it to me anyway.
